Learn to Judge the Ingredient: Market Shop and Roman Class
The part of this class that stays with you is not a recipe. It is learning what to look at when you pick something up: how to tell a good tomato from a decorative one, why one piece of pecorino costs three times another, what a market trader is actually telling you when they say something is from here. The morning starts with shopping, in the markets and shops of the centre, choosing what will be cooked later. Then the kitchen: traditional Roman dishes under a chef who explains as you go, pasta made by hand, and seasonal dishes built around whatever came back in the bag. Then everyone sits down and eats what they made, with Italian wine or other drinks. Before booking, note the terms, which are stricter than most: all sales are final and no refund is given for cancellations. Book it for a day you are certain about. Meeting point: outside the main entrance of the Teatro Argentina at Largo Argentina, next to the Rossopomodoro restaurant.
