RomeA pizza workshop held at Osteria Pasquino, in Piazza Pasquino 1, a minute from Piazza Navona and worth finding for the address alone. The square takes its name from the battered marble torso propped against the corner of the building. Pasquino is the oldest of Rome's talking statues: for five hundred years Romans have stuck anonymous verses to it mocking popes, cardinals and governments, and the word pasquinade comes from exactly that habit. People still leave notes there. It is the only free-speech monument in Europe that works by adhesive tape. Via del Governo Vecchio starts at the same corner, which is among the better streets in the centre for walking after you have eaten. The class itself is run by an operator who has been in hospitality for more than eight years and holds the workshops in their own restaurants, with their own staff, rather than renting a kitchen. You learn to make Italian pizza properly and then eat it, looking out at the street.

Guests are met inside Osteria Pasquino. Arrive ten minutes early and ask the restaurant staff to take you through to the class. Anyone who arrives late or does not turn up can be rebooked only at extra cost. Contact customer service for help. Refunds are not given.
