Learn to Pick the Wine Yourself: A Trastevere Tasting
The point of a tasting is what you can do afterwards without the person who ran it. The wines are poured with food chosen to go with them, and the pairing is explained as you drink, so the reason a particular wine works against a particular cheese is something you taste rather than take on trust.
