Aperitivo First, Then You Cook: An Evening Class in Trastevere
The evening runs in the Italian order rather than the tourist one. You get a drink first, prosecco or a spritz, before anyone touches flour. That is not a detail: an aperitivo is what Italians do between finishing work and eating, and starting there sets the pace for the rest of the night. Then the work. Pizza from scratch with a local chef, and tiramisu, both made by hand rather than watched. Then you sit down and eat them, with unlimited beer and wine. It is an evening out that happens to involve a kitchen, which is a different proposition from a daytime class fitted between two museums. Book it for a night when nothing else is planned afterwards.
