Gnocchi Class at Ristorante Panzirone on Piazza Navona
Gnocchi rather than pasta, which is a different skill and in some ways a harder one. The class runs at Ristorante Panzirone on Piazza Navona. Instructors take you through the dough first, then the shaping, which is where gnocchi are won or lost: too much flour and they go heavy, too little and they fall apart in the water. Doing it under someone's eye once is worth more than reading about it ten times. Afterwards you sit down at the restaurant with the rest of the group and a drink, and the staff bring out the gnocchi you made with the sauce you chose. Gnocchi have a fixed day in Rome. Thursday is gnocchi day, still printed on trattoria menus across the city, and if you take this class on a Thursday you are doing what the neighbourhood is doing. Arrive ten minutes early and ask the restaurant staff to take you through.
