The matching is the product. Within a day of booking you get a short questionnaire about what you like and how you travel, and the answers decide which host you are paired with. That host then contacts you directly, proposes where to go and agrees a time and place with you before the evening starts. Which means the stops listed anywhere are examples, not promises. This is stated plainly by the operator and it is worth repeating: your host chooses the places, based on you. The aperitivo itself came south from northern Italy and Rome adopted it thoroughly. A spritz or a cold beer, and a plate of small things to eat: focaccia, bruschetta, cured meats, supplì, whatever the bar is good at. Where that happens depends on what you say you want.
